  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion diced
  • 2 tbsp fresh cilantro chopped
  • Lime Dressing
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • Pinch of salt

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper.

  4. In a small bowl, whisk together all dressing ingredients.
  5. Divide brown rice among serving bowls.
  6. Top with roasted sweet potatoes, black beans, avocado, tomatoes, and red onion.
  7. Drizzle with lime dressing and garnish with cilantro.
  8. Serve immediately.
