Ingredients
  

  • 1 cup quinoa cooked
  • 1 avocado sliced
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup shredded carrots
  • 1/4 cup red cabbage sliced
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Method
 

  1. Cook quinoa according to package instructions and let it cool slightly.
  2. Arrange quinoa in a serving bowl.
  3. Top with avocado, tomatoes, cucumber, carrots, and red cabbage.
  4. Drizzle olive oil and lemon juice over the bowl.
  5. Season with salt and black pepper.
