Healthy Greek Chickpea Salad

A healthy and refreshing Greek Chickpea Salad packed with protein-rich chickpeas, crisp vegetables, feta cheese, and a light lemon olive oil dressing. Perfect for meal prep, healthy lunches, or quick dinners.

Ingredients
  

  • 2 cups chickpeas drained and rinsed
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup black olives sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Method
 

  1. Add chickpeas, cucumber, tomatoes, onion, and olives to a large bowl.
  2. Drizzle olive oil and lemon juice over the salad.
  3. Season with oregano, salt, and black pepper.
  4. Toss everything gently until well combined.
  5. Top with crumbled feta cheese.
  6. Chill for 10 minutes before serving for the best flavor.

Notes

Add avocado for extra creaminess.
Use fresh parsley or mint for added freshness.
Store leftovers in the refrigerator for up to 2 days.
